Blueberry-Pineapple Galaxy Smoothie

Ingredients:
• 1 cup frozen blueberries
• 2 cups frozen banana slices, divided
• ½ cup plus 2 tablespoons unsweetened vanilla almond milk, divided
• 1 cup frozen pineapple chunks
• ½ cup vanilla Greek yogurt
• 1 tablespoon unsweetened shredded coconut

Directions:
Combine blueberries, 1 cup of the banana slices and a ½ cup of the almond milk in a blender. Cover and blend until smooth. Transfer this mixture to a bowl and clean blender. Combine pineapple, remaining cup of banana slices, yogurt, coconut and 2 tablespoons milk in clean blender. Cover and blend until smooth. Layer smoothie mixtures by spooning blueberry mixture into glasses. Spoon pineapple mixture on top and follow with another layer of blueberry. Swirl the layers together with a clean table knife to make a galaxy effect.


Easy 3-Ingredient Pineapple Whip

Ingredients:
• 2 cups frozen pineapple chunks
• 1 cup vanilla ice cream
• ½ cup pineapple juice (or orange juice)

Directions:
Place all ingredients in a high powered blender or food processor. Start on low then turn up to high. Process until smooth. Scoop into bowls or if you’re feeling fancy, pipe into bowls using an icing bag and star tip.


No-Churn Pineapple Frozen Yogurt

Ingredients:
• 1 fresh pineapple, cubed
• 1 single serving Greek yogurt (plain or vanilla is best)
• 2-3 tablespoons honey

Directions:
Slice pineapple in half lengthwise and score flesh with a knife. Remove cubes of fruit, using a spoon and place cubes into blender.Place hollowed-out pineapple to the side for later use. Add honey and yogurt to blender and blend until smooth and creamy. Pour this mixture into a loaf pan and freeze for one hour. Periodically, remove the loaf pan from the freezer to stir the mixture until three hours have passed. Transfer to hollowed-out pineapple shell for serving.
